Mid Winter Recipes – Filo Pastry Crackers
A Yummy Novelty Treat for your Dinner Guests!

These delicious party snacks make an excellent choice for your dinner guests who want something a little lighter but full of taste. This dish pairs well with our Original Kombucha. Here’s how to make it:
Ingredients:
- 400g parsnips
- 300g carrots
- 1 large onion
- 6 cloves of garlic
- Few sprigs of fresh thyme and rosemary
- 30g fresh parsley
- 200g mixed nuts
- salt and pepper
- olive oil
- 100g vegan butter
- 16 sheets of filo pastry
Method:
Wash the parsnips and carrots and cut into 2cm dice. Chop the onion and peel the garlic. Place into a large baking tray, drizzle with olive oil and season with salt and pepper. Push a few sprigs of thyme and rosemary into the vegetables and cook at 180C for about 30 minutes or until soft.
Chop the parsley and the nuts roughly. Mix into the roasted vegetables.
To assemble:
Melt the vegan butter. Place a sheet of filo pastry down and brush with butter. Place another sheet on top and brush the lower half of this with butter also. Place some of the vegetable mixture along the top half leaving about 4cm either side. Roll up the pastry enclosing the filling to a long sausage shape. Pinch each end together to look like a cracker and fasten with a piece of cotton string. Bake at 200C for 20-30 minutes until golden. Serve with your favourite greens and cranberry sauce and a bottle of Original Equinox Kombucha.
